Meat and chocolate

I'm co-teaching both this semester, together with a chef.  So between the two of us, it's pretty fun.

Breaking down a chicken

I do the agriculture side, she does the culinary side, we both coordinate readings and papers and discussions and demos and field trips... and then we kind of act as one another's foils (i.e. she demos chocolate making, I try it and mess it up, and then students end up somewhere in between).

Goats are still doing well... staying warm despite the cold temps

One chicken had an ice ball stuck to her foot, but after a visit to the house for foot-thaw in the sink, she seems to be doing better.


We had some visitors in late December, friends we knew in Minnesota and then also in Washington, and who now live in upstate New York...

And went to Ohio for a weekend to meet up with other friends who traveled in from Indiana



 Liel and Eytan are still doing great...

Just happened to check for an update right after you've posted one. Does your meat class deal with ethical issues in meat production/consumption? Or is it more technical? Just curious. What a great field you've found your way into! Teaching chocolate!

@GEB, the goal is to look at it from many angles... ethical issues, cultural/historical stuff, production practices, animal welfare/grass-fed/organic/conventional/etc etc, meat science, slaughter, etc etc... i can send you the syllabus if you're interested...
